thats right, I am joining the club. here is a recipe of my own that we have been eating a lot of this summer.
:: bbq chicken salad ::
mixed baby greens (store bought)
cucumber (peeled and sliced)
carrot (peeled and sliced)
tomato (seeded and chopped)
colby jack cheese (grated)
whole kernel corn (warm)
bbq chicken (warm)
eaten with ranch dressing (in moderation)
Assemble the first five ingredients, refrigerate. Slice raw chicken breast into bite size pieces, pan fry over medium high heat in tablespoon or two of olive oil, when almost cooked through, change heat to low and add bbq sauce to taste and warm. Used canned corn (or fresh if you are that industrious) and warm it in the microwave. Add warm corn and finished chicken to assembled salad, eat with ranch dressing. delish.
of course, you could use actually bbq'd chicken... but who does that?

oh wait... you don't like american... hmm well how about colby jack?
we've been eating lots of bbq chicken salad here at our house too. except we eat it with black beans, avocado, and cilantro thrown in the mix with ranch and bbq sauce drizzled on top... delish! nothing beats a hearty summer salad.
