I took bits and pieces of different recipes, made a few modifications, and came up with this.
:: honey-lime chicken salad ::
:: dressing ::
juice from 2 limes, and one more if they aren't very juicy.
2 tablespoons of honey (plus one extra healthy squirt for fun).
1/8 teaspoon of salt
dash of pepper
1/4 teaspoon (or so) of poppyseeds
:: ingredients ::
grilled or baked chicken breasts
(I baked mine in the oven with the ingredients from the dressing plus extra virgin olive oil)
baby spinach leaves
avocado
green onion
fresh peaches
I set the plate up with sliced chicken breast on the bottom, topped it with the spinach leaves, sprinkled some chopped green onions, placed sliced avocado on top, placed some fresh peach slices on the side and drizzled the whole plate in the dressing to taste. I am craving it again already.
jeff suggested it would be great with some sliced almonds or pine nuts. maybe we will try that next time. so perfect for summer. and oh yeah, I baked the chicken earlier and chilled it in the fridge, so the salad would be a cold salad

That is so funny because I have been in love with the food network lately and just saw my first five min of the next food star tonight! And I really want to get into it! Oh the life of a stay at home mom! We truely are one in the same rip rip sgettio! Hahahahaha
